INTRODUCTION

The word “mezcal” originates in the Aztec Nahuatl; it’s defintion literally means “cooked agave”
“metl” in Nahuatl means agave; “ixcalli” in Nahuatl means cooked, thus forming the word “mezcalli”
Historically and colloquially to this day, the term “Mezcal” is collectively used in Mexico to describe any
agave distillates produced from Mexican agave species throughout its territories with different
production techniques. Tequila was once called “vino de mezcal” or “wine of mezcal”, an agave brandy
which was first obtained by distilling the mash from the roasted hearts of the blue agave plants.
